The Sweet Story Behind LN – Eat More Art

There’s something about the perfect bite of chocolate. For Ellen Stone, founder of LN – Eat More Art, chocolate isn’t just dessert – it’s an experience, an emotion, and a little piece of edible art. Her journey from trades to truffles is anything but ordinary, and her creations are anything but typical.

Ellen didn’t always see herself in the culinary world. With a background in trades, she found herself at a crossroads and ready for change. “I knew that I could bake every day of my life and be happy,” she shares. That realization led her to apply to culinary school and make the move to the city.

A Passion Perfected at NSCC

Ellen’s time in NSCC’s Baking and Pastry Arts program was transformative. She’d already completed the Boulanger program the year before but knew she wasn’t done learning. “The instructor was so influential in helping me become the pastry chef I am today,” she says. “I left the program feeling confident in my skills, knowing that I was fully invested in this career.”

Ellen doesn’t define her work by a strict style. Instead, she trusts the science and doesn’t take things too seriously – an approach that keeps her grounded while leaving room for creativity in every bite. Her inspiration often begins with nostalgia, “I love taking flavours from childhood and giving them a modern twist, things you loved as a child, but maybe don’t hold up the same as an adult. That’s the sweet spot for me.” Ellen’s ideas can spark from anywhere: her library of cookbooks, Instagram, pastry magazines, Pinterest, or even a colour palette that sends her reaching for a spatula.

Of all the treats she’s crafted, s’more bars hold a special place in her heart. “They are made of a milk chocolate shell, filled with vanilla marshmallow, and have a graham cracker on the back. They are everything you want in a s’more and take you straight back to being a kid at a summer bonfire.”

The Power of Community

Ellen loves the atmosphere of the event and the opportunity to support the autism community. “I enjoy hearing the music, seeing the camp experiences, and watching people come together to support those on the autism spectrum. Food brings people together, and I’m happy to be a small part of that.”
